Recipe for Adventure: The Very Best Wild Garlic Soup Recipe
The secret is the marinated feta garnish flecked with curry leaves and seeds
Wild garlic season is still a ways off for us in northern Scotland. However, I know many of you down south are picking it by the bucket-load so I wanted to share this recipe for a wild garlic soup that’s honestly leagues above the rest.
What makes it so awesome? Two things: (1) lots of onion seeds and a (2) a marinated feta garnish that you’ll want to use on everything. And bonus…
You can make this with pretty much any green veg!
No wild garlic? No problem. Try it with spinach, kale, chard, or whatever green vegetable you have around. (I made it the other day with some broccoli and courgette that needed using and it was superb.)
The recipe is inspired by Anna Hansen of the London Restaurant, The Modern Pantry, which sadly closed during Lockdown and never re-opened. So you will just have to make this soup for yourself.
